Freedom Rangers are a slow-growing French breed known for their incredible flavor and suitability for raising on pasture. They're the French answer to creating a product that reflects heritage genetics, tastes wonderful, and is economically viable to produce. This is an experimental batch of this new breed; the flavor is, if you can believe it, even better than our regular pastured poultry. We recommend cooking these birds at a low temperature to allow their muscles to soften: try roasting at 300-325F for 50-100 minutes. Feathers are darker so you may notice more pinfeathers than you are used to; they'll disappear after cooking, or you can remove them with tweezers before cooking if you want, though it is not necessary.

Freedom Ranger Chickens are whole but have been spatchcocked, or cut down the backbone. You can roast them as is, flatten them to cook on a grill, or break down into parts.

Cooking Methods
  • Grill: Sear over high heat, then transfer to a cool side ("indirect heat") to continue cooking until meat is tender.
  • Oven/Roast: Rub with your favorite herbs, spices, and oil. If you want really crispy skin, refrigerate, unwrapped, overnight to let the skin dry out a bit. Roast at 450 for ~45 minutes, or until juices run clear.
