Description
Picanha is a lean cut with a nice fat-cap that is traditionally grilled over hardwood charcoal to rare or medium rare. Score the fat in a cross-hatch pattern, season with your favorite rub, or just salt and pepper, and grill. You can also cut it across the narrow end in 2" wide strips, and skewer for grilling. Since authentic Picanha is cut from the round (hindquarter), we fabricate our "Mock Picanha" from the shoulder-eye of our pastured Black Angus beef, which is a a similarly lean muscle with a nice fat cap. Do NOT cook past 130F, or this cut will be tough. Our ranchers graze their cattle on pasture in the mid-Atlantic region of the United States, where they enjoy a carefully balanced diet of grass, forage crops and hay that never includes hormones or growth promoting antibiotics. You'll immediately notice the incredible flavor in the meat, and the fat on this cut, from our pasture-raised beef. Picanha is a lean steak with a nice fat-cap that is traditionally grilled over hardwood charcoal to rare or medium rare.
- Grill: Grill whole to 130F, let rest, slice against the grain; or slice into three or four sections, thread on a skewer, and grill over indirect heat, flipping every 5-8 minutes, until internal temp reaches 130F.
- Oven/Roast: Roast the whole steak in the oven at 325F until internal temp reaches 120-125F (temperature will continue to rise after you remove from the oven). To finish, cut the steak into 3-4 pieces and sear in a cast iron pan or on a grill.
- Sousvide: Cook sous-vide at 130F for 6+hours, then sear in a hot pan or on the grill on all sides before serving.
