When braising, make sure your pan is covered, and there is enough liquid in the pot to come up a third of the way over the roast. After a couple hours, flip and add more liquid (broth, water, wine, etc.) as needed.

Cooking Methods
  • Dutch Oven: Use a slow-cooker to gently braise this cut.
  • Oven/Roast: Braise low and slow until tender. Do ahead: braised meats taste best a day or two after cooking.
  • Sousvide: Use your electric immersion circulator to cook to desired doneness. Pat dry, then sear over high heat, 1-2 min per side, to develop crust.

Hello, please tell me what is the difference between French brisket and French roast? I am deciding for Passover. Also cooking method, is it the same for both, low and slow? If I want to make French brisket for 10 people at Passover what do you recommend? Many thanks.

French Brisket is a braising roast. It's pretty small generally, but can be cooked like any pot-roast or braised brisket recipe. It's a small roast, so you'd need roughly 2 3lb roasts for 10 people (aim for 5-7lbs for 10 people)


French Roast is a little different -- it's what we make Denver Steaks from. It can be braised like a pot roast, or it can be dry-roasted.
