If you can make this ahead, you should. Brisket gets better a few days after it's cooked.

Cooking Methods
  • Oven/Roast: Braise low and slow. Do ahead: braised meats taste best a day or two after cooking!
  • Sousvide: Use your electric immersion circulator to cook to desired doneness. Pat dry, then sear over high heat, 1-2 min per side, to develop crust.
  • Smoker: Smoke until internal temperature reaches 133F, keeping your smoker temperature between 215F-230F. For a 4lb roast, this will take about 2 hours.

Product Questions

I am cooking the 10 lb. whole brisket today using a recipe with onions, celery, seasonings, chili sauce and beer. The recipe says to cook at 325 for 1 hour per pound. That seems too long. Please advise me how to make this come out perfectly. I do not want to ruin a $250 piece of meat!!!

Thank you for being in touch! 10 hours is definitely too long at that temperature! We would recommend 4-5 hours at that temperature to get it fork-tender. Make sure it has plenty of liquid. We always recommend low and slow!

I am making one of your brisket recipe (the one with honey wine onions...) and had a question. The recipe says cook 2+2/2.5 hours @ 325 for a 4-5 lbs piece. Mine is probably around 2.5 lbs based on what i ordered last time. What are the cooking instructions? Please let me know ASAP since i started the put my dish in the oven at 8 am.<br> Thank you SO much and shabbat shalom!"

Cook your brisket for at least 3.5 hours, you can take it out and slice it after 2 hours and then put it back in the liquid and let it cook another 1.5-2 hours or you can cook it for the entire 3.5-4 hours, take it out, let it cool, and then let it hang out in your fridge until you want to heat it up. If you choose the second option, just slice it while it's cold, before putting it back in the oven for easier slicing.

I think you're really going to enjoy your brisket either way! Just remember, the key to a braise is making sure there's liquid at least half-way to the brisket the whole time, if your liquid evaporates, add more red wine and broth. Braising cuts are incredibly forgiving as long as we give them what the like: time and liquid!
