Trimmed to perfection, our Whole Brisket includes the first and second cut brisket held together by a vein of marbling that bastes your roast from the inside. This is the best brisket you've ever tasted: flavorful, rich, tender, delightful. This brisket comes from our Black Angus cattle, which are specially bred for tenderness and raised in the US on pasture with no hormones or antibiotics. With their carefully balanced diet of pasture, hay and grain, our beef is tender, well-marbled, and flavorful. How do we do it? Our cattle are raised sustainably on carefully managed US rangeland (never on deforested South American rainforest lands). Want to increase the quality of your shabbat or holiday meals? If you can make this ahead, you should. Brisket gets better a few days after it's cooked.
- Oven/Roast: Braise low and slow. Do ahead: braised meats taste best a day or two after cooking!
- Sousvide: Use your electric immersion circulator to cook to desired doneness. Pat dry, then sear over high heat, 1-2 min per side, to develop crust.
- Smoker: Smoke until internal temperature reaches 133F, keeping your smoker temperature between 215F-230F. For a 4lb roast, this will take about 2 hours.
