Description
Lamb riblets are cut from the breast, which is one of the tastiest and fattiest parts of the animal. The fat is integral to the cut, and you don't need to trim it before cooking, and it's one of the best cuts to savor the incredible flavor of our Shenandoah Valley pasture-raised lamb. Pieces are about 4" long and contain 3-4 rib bones.
These are super fatty, but once you chill them and skim the fat off, you're left with very delicious meat!
- Oven/Roast: Braise or low-roast for 4-5 hours, until tender. Cool. Skim fat. Reheat to serve.
- Smoker: Season, then cook in smoker for about 5 hours until tender.
