These Turkey Breast Filets are a great way to enjoy our delicious pasture-raised turkey without the hassle of roasting a whole bird. You can roast this boneless, skin-on filet as is for a low-fat, all white meat treat, or slice it thin to make breaded and fried turkey cutlets. This cut is also perfect for making a turkey roll: layer with herbs, vegetables and rice, then roll, tie and bake. Our pastured turkeys have much more moisture and flavor than conventional birds because they spend their days out on the pasture. They also cook much more quickly, so take care not to overcook this cut.

Cooking Methods
  • Oven/Roast: Roast at 325F, or smoke. Allow 10 min per pound and use a meat thermometer -- the flesh may still look "pink" but if the temperature is 165F and juices run clear, your bird is cooked. Read more: How To Cook a Half Turkey
