Description
Our lean, affordable kalakel (also called Chuck Tender or Apple Roast) is a wonderful slow-cooking roast. Braise it until tender and then slice -- or cook even longer and use to make pulled beef.
This is a lean cut that you'll want to have almost completely submerged in your braising liquid while braising.
- Dutch Oven: Use a slow-cooker to gently braise this cut.
- Oven/Roast: Braise low and slow until tender.
- Sousvide: Use your electric immersion circulator to cook to desired doneness. Pat dry, then sear over high heat, 1-2 min per side, to develop crust.
