Description
A small rack of four delicious and tender lamb short ribs from our pasture-raised Shenandoah Valley lamb. This cut is perfect for the spice rub of your choosing, cooked on the grill or in a hot, heavy skillet. For maximum tenderness, braise or steam then finish on the grill. For medium tenderness sear on hot grill, then move to indirect heat for 20-30 minutes.

- Grill: Sear on the grill over high heat, then finish using indirect heat. Can also be braised and seared on the grill to finish.
