Hanger steak has a membranethat runs down the middle of it; you may choose to order a whole steak, or a demi hanger steak, which is half of a regular Hanger Steak, cut on either side of the membrane. We soak our pastured hanger steaks 2-3 times before packaging, but due to the kashering process, this can be a salty cut. If you are salt sensitive, you may wish to soak again in cold water for 30-60 minutes.

Bring your steaks to room temperature and pat dry before searing.

Cooking Methods
  • Grill: Cook to medium rare for 6-8 minutes per side, then tent with foil and allow to rest for 10 minutes before slicing and serving.
  • Pan: Sear over high heat in a pre-heated cast-iron or heavy metal pan, 2-3 minutes per side until steak releases from the pan. Transfer pan to 350F oven to finish cooking to desired doneness.
