Veal Osso Bucco


A classic Italian cut, Veal Osso Bucco is traditionally braised in red wine with garlic and aromatics. These cross cut shanks are netted beautifully so that they won't fall apart until they get into your mouth. You haven't lived until you've enjoyed the marrow from the center of these bones. Cut ~2" thick. Our delicious Rose Veal comes from animals raised outdoors on pasture, with plenty of room to graze and move around. They are never forcibly confined, as is common in conventional veal. Instead, these animals nurse from their mother until 6-8 months, and then enjoy a diet of grass and locally-grown grain (including hay and haylage, fermented grain).

Braise low and slow with netting intact; remove netting with scissors before serving.
- Dutch Oven: Use a slow-cooker to gently braise this cut, or add to soups, stews or chulent.
- Oven/Roast: Braise low and slow. Do ahead: braised meats taste best a day or two after cooking.
