If you are salt sensitive, you may wish to soak again in cold water for 30-60 minutes. Skirt Steak holds a marinade really well, because all those grooves mean a lot of surface area. You won't get as crisp a sear with marinated meat, but for skirt steak it's worth it. If you are sensitive to salty meat, cut off a piece of the skirt steak, fry it up and taste it. If it's too salty for your taste, soak in cold water for 30 minutes then proceed with cooking.

Cooking Methods
  • Grill: Sear over high heat on a grill, then finish using indirect heat. Tent with foil and let rest for 10 minutes before slicing and serving.
  • Pan: Cook over medium heat until crust forms and steak releases easily from the pan. Flip and cook other side. Avoid crowding the pan
