Description
If you love a lean, flavorful steak, this Shoulder Steak from our pasture-raised Black Angus beef is for you. Cut from the same piece as our kabobs, this is a great option for customers who prefer a lean, tender steak but aren't looking for something as fancy as filet mignon. Serve this in thin slices to a crowd and it's sure to please. Cut 1.25" thick.

Prepare like a London Broil. This cut is flavorful enough to stand up to a marinade, and can be cooked quickly over a high heat. Because it's so lean, don't over cook it!
- Grill: Sear over high heat on a grill, then finish using indirect heat. Tent with foil and let rest for 10 minutes before slicing and serving.
- Pan: Sear over high heat in a pre-heated cast-iron or heavy metal pan, 2-3 minutes per side until steak releases from the pan. Transfer pan to 350F oven to finish cooking to desired doneness.
