Description
Here's a cut where you'll appreciate the care and attention that goes into every step of the process of raising our pastured Black Angus beef. Cut ~1.25" thick, these Bone-In Rib Steaks will satisfy even the most discerning palate. The eye of the rib is the most tender kosher cut available, and you'll find it here surrounded by the crescent, or ribeye cap, which is the most delicious piece of meat on the entire steer. We graze our Black Angus cattle on pasture in the mid-Atlantic region of the United States, where they enjoy a carefully balanced diet of grass, forage crops and hay that never includes hormones or growth promoting antibiotics, to bring you truly delicious steaks such as these.
I like to put a little olive oil and salt out -- cut a piece of steak, then dip it in the olive oil and salt before you eat it.
- Grill: Sear over high heat on a grill, then finish using indirect heat. Tent with foil and let rest for 10 minutes before slicing and serving.
- Pan: Sear over high heat in a pre-heated cast-iron or heavy metal pan, 2-3 minutes per side until steak releases from the pan. Transfer pan to 350F oven to finish cooking to desired doneness.
