Each strip is cut from the richly marbled plate ribs, and has three bones. Smoke or cook at low temperature for a few hours and you'll have some meltingly tender ribs. At Grow & Behold, our cattle graze on pasture in the mid-Atlantic region of the United States, where they enjoy a carefully balanced diet of grass, forage crops and hay that never includes hormones or growth promoting antibiotics. We carefully wet-age our beef on a precise and proprietary aging cycle, before it is vacuum sealed and flash frozen at peak quality. With a tight seal, you can enjoy this meat from your freezer for up to 2 years with no loss of quality -- but you are not going to hold on to these morsels for that long, trust us.

Cooking Methods
  • Oven/Roast: Braise low and slow until tender. Do ahead: braised meats taste best a day or two after cooking.
  • Smoker: Smoke at 220F for 2-3 hours, until meat is tender.
