Description
You can use this Pastrami Roast to make your own pastrami at home, or simply cook it like a pot roast. It's cut from the same beef navel (plate) we make into pastrami. It is NOT already seasoned or cured; if you want to make Pastrami, you'll need to do those steps yourself.

Cook this a day ahead and refrigerate; the fat will solidify and you can remove it before reheating.
- Dutch Oven: Use a slow-cooker to gently braise this cut.
- Oven/Roast: Braise low and slow until tender.
