Description
These flavorful pieces are cut from well-marbled sections of the chuck, and can be prepared the same way as any short rib recipe. They'll do nicely when seared to build flavor and then braised until tender. You can cut the pieces down to individual portion size before, or after, cooking, if you don't want to serve as strips. Meat will shrink to approximately 2/3 size of the raw pieces as they cook.
- Dutch Oven: Use a slow-cooker to gently braise this cut, or add to soups, stews or chulent.
- Oven/Roast: Braise low and slow. Do ahead: braised meats taste best a day or two after cooking.
