Ah, the hanger steak: a truly one-of-a-kind steak that has no peer (we mean this literally: there is only one per steer!) The hanger is richly striated, or grooved; somewhat like a skirt steak, that means it has ample opportunity to absorb a marinade. But it's much more tender than a Skirt Steak and has a special flavor all of its own. Cut from our pastured Black Angus beef, which are bred for tenderness and graze pasture in the mid-Atlantic region of the United States where they enjoy a carefully balanced diet of grass, forage crops and hay that never includes hormones or growth promoting antibiotics, these steaks are one of our most flavorful and most popular. We carefully wet-age our beef on a precise and proprietary aging cycle, before it is vacuum sealed and flash frozen at peak quality. Bring your steaks to room temperature and pat dry before searing.
- Grill: Cook to medium rare for 6-8 minutes per side, then tent with foil and allow to rest for 10 minutes before slicing and serving.
- Pan: Sear over high heat in a pre-heated cast-iron or heavy metal pan, 2-3 minutes per side until steak releases from the pan. Transfer pan to 350F oven to finish cooking to desired doneness.
