These extraordinary steaks are painstakingly hand-selected by our butchers for exquisite marbling, then dry-aged for at least 30 days to concentrate and enhance the flavor. They're cut to 2" thick, with the feather bone removed and the rib bone Frenched to give you a classic "Cowboy" or "Tomahawk" steak that looks as amazing as it tastes. Black Angus cattle are known for their superior taste, quality, and marbling. Our ranchers graze their cattle on pasture in the mid-Atlantic region of the United States, where they enjoy a carefully balanced diet of grass, forage crops and hay that never includes hormones or growth promoting antibiotics. Perfect with nothing but salt and pepper, though this steak can also take a flavorful dry rub. Bring your steaks to room temperature and pat dry before searing.
- Grill: Sear over high heat on a grill, then finish using indirect heat. Tent with foil and let rest for 10 minutes before slicing and serving.
- Sousvide: Use your electric immersion circulator to cook to desired doneness. Pat dry, then sear over high heat, 1-2 min per side, to develop crust.
