Cut from the chuck of our pasture-raised Black Angus cattle. Slice across the grain to serve. Steaks are about 1" thick and 6-9" long. This cut is GREAT for Sous Vide Cooking.

Naf’s Tips Naf’s Tips

This is an excellent steak to sous-vide or cook to medium-rare and serve cold, thinly sliced for sandwiches. If pan-cooking or grilling, bring your steaks to room temperature and pat dry before searing.

Cooking Methods
  • Grill: Sear over high heat on a grill, then finish using indirect heat, to medium rare. Tent with foil and let rest for 10 minutes before slicing and serving.
  • Pan: Sear over high heat, then reduce heat or transfer pan to oven to finish cooking. Let rest 10 min before slicing.
  • Sousvide: Cook for 3-4 hours at 133-136F. Shock, then sear before serving.
