Naf’s Tips Naf’s Tips

Cook your ribs low and slow until almost tender, then add the BBQ sauce or any other thick, sweet or umami glaze to the ribs during the last hour of cooking (or just before serving) so you avoid scorching the sweet sauce.

Cooking Methods
  • Grill: Sear over high heat on a grill, then finish using indirect heat. Tent with foil and let rest for 10 minutes before slicing and serving.
  • Smoker: Cook meat-side up, until internal temp in thickest part of ribs reaches 165°F. Wrap each rack tightly in butcher paper and return to smoker. Cooking until an instant read thermometer registers 185°F when inserted into the thickest part of the ribs. There should be no resistance when inserting the thermometer into the meat. Let rest for 30 minutes and up to 3hrs before serving.
